I love Melissa Clark's garlicky pork carnitas in her instant pot cookbook. We get flour tortillas, guacamole, cilantro, diced onions, shredded cheese and diced tomatoes as toppings for people to choose from. One of our staples.
I like Melissa Clark too! I don't have an InstaPot, but I've been using a few of the NYT recipes for different marinades. This one is my favorite:
I don't generally go for chocolate chocolate cookies, but I've been making this recipe every ten days or so. I scoop the dough into balls and freeze in Stasher reusable plastic bags in the freezer. Every night, I bake a few cookies. This system has changed my life! Having a variety of homemade cookies on hand keeps me feeling more relaxed and less deprived when it comes to sweets, and I notice it leads to me not overeating.
If there are any other people who bake a lot, I'd love to get some go-to recipes. I'm not sure why each recipe is making me create a new post but hopefully those links work. If you don't subscribe to the NYT, google the recipe and you should be able to see it.

Soup, chicken and rice, pot roast... I'm game for whatever. And it makes the house smell wonderful!
I use my slow cooker for Indian and Mexican meals. I'm not much for mushy beef stew but a big pot of kitchari or posole is so soothing.
