vegetarian/pescatarian moms, what are you serving for thanksgiving? We usually go to a big dinner where we (happily!) eat sides, not turkey, but this year its three of us at home and I'm looking for ideas.
How about boeuf bourguignon with portobello mushrooms instead of beef, serve over cheesy polenta with sides like brussel sprouts with cranberries and nuts? Sounds yummy to me :)
We have done a vegetarian Italian themed thanksgiving with success. A pasta dish (e.g. stuffed shells with spinach/parmesan/ricotta), whipped potatoes or potato gratin, sautéed mushrooms with thyme, fresh pie. Goes well with red and white wine and no one misses meat (although perhaps this can be too much cheese).
Same! My DC just decided to go vegetarian and I want to support him (I'm also not a big meat eater, by taste rather than philosophy). Not sure what the heck to make.

@Anonymous oh good idea! i did a mushroom ragout over polenta for xmas once that I liked a lot.
