A few years ago we went snowshoeing at Rockwood Hall (https://goo.gl/maps/FgR3MuXcTm3ypCh5A), near Rockefeller State Park (https://goo.gl/maps/qoF9FrPX9gteHcvB6). I'd imagine you could snowshoe at Rockefeller State Park as well, from which you could wonder onto Stone Barns.
We went snow tubing recently at Campgaw Mountain in Mahwah, N.J., about 25 minutes from the GWB. You need to reserve 6 days in advance, since they are limiting numbers and it sells out. It's a lot of fun.
Doubt it-would need natural snow, and they don't even have much in VT!
